Being a Tour Guide For
Your Guests-Think about when
you were a little kid and you went on a field trip to the local
museum and
you followed the tour guide around as she described what you were
seeing. This is exactly the way it is when a guest first looks at
your menu. They need a little context, a little background about
what they are exploring. Teach
your servers and front line counter personnel to:
- First--listen to their guests and
then point out things that may be of special interest.
- Guide them to posted information
on the menu/menu board rather than to simply ask if they want x.
- Give their guests
context-Examples: "That's my favorite" or "The
chef really does a great job with that" or "If you
like x then you'll love our version"

Being a Tool Giver
for Those You Manage and Lead Means You:
- Go through your day constantly
aware of teaching moments for your entire staff.
- Share things that are of interest
to those that you are developing-even if there not business
related.
- You see yourself on the
organizational chart as the "Concierge of
Information".
- Share the lessons that you learned
along the way-(even the lessons that may embarrass you a little
bit).

Be Attuned to How Others Are Marketing. Marketing is
all around us---and the economic climate we are currently in presents a
great opportunity to see what's happening in other businesses and
learn how they are trying to attract dwindling dollars to their
operations. We can learn a lot by observing and then thinking
about how we can apply the lessons learned to our business.
Things That
are Happening in the Marketplace that We Could Use:
- Downsize
portions-or create combo mini-portions--along with a downsize in
prices!
- Reward
programs for those that keep coming back. Isn't this what we
should always be trying to do---this time around our
guests may be more attuned to a reward for coming back. Guests
get a deal and we
get the reward of seeing regulars (bigger spenders) more often.
- Can
we steal the gas card idea--and apply it to our business? I
think-yes....X number of visits per month gets you a $X gas
card. If anything--I'll bet you'll get tons on pub with this
idea.
Key
to Success: Observe how other businesses are marketing
themselves and then ask yourself--how could that be applied in my
operation.
