the Front Lines of Service: Using
Line-Up Time to Quiz Your Staff-Here's
an idea for your line-up time with floor staff. Write down on a
strip of paper each of the items you have been teaching and working
on with your staff. Throw them all into a hat and then at each
line-up have a couple of servers "volunteer" to draw and
teach the concept that appears on the paper. Some ideas on areas to
cover.....how to handle check backs, more fire requests, food
allergies, guest complaints and the list goes on and on. Provide
some type of reward for the staff member that does the best
job.

rules you set down for others.

- Be quick to give credit-give it
publically and loudly every chance you get!
- Take one for the team-When a goal
is not reached or a complaint comes in take full
responsibility---don't be quick to blame others!

What to Do with Rising Food Costs. It's time to go
"Old School" on Food Cost. Even if you have the fanciest
POS and the coolest purchasing system on the planet--food costs are
simply going to continue to go up because of all kinds of pressures
like fuel cost, feed costs, and labor costs. It's not pretty but
here are three things you can do right now:
- Triple check your yields on all
center of the plate items. Put in the time to test what you are
actually yielding-from raw to cooked to portioned. See what menu
items are actually costing you!
- Publish a portion list for the
entire staff--and then use it everyday to spot check
portions-yes this even includes the number of coffee creamers
you decide to provide to guests.
- Include all the eyes, ears and
hands that work in your operation--Create incentives in each
area of your operation for staff to help control costs,
eliminate waste and identify better ways to do
things!
Key
to Success: Get started by zeroing in on the most costly
items on your menus. Use the three bullets above and apply them to
each item you review. Better yet--teach someone to do this and then
let them loose on the entire menu!
