Thought for the Month
Salute to Chefs-This weekend I
have the privilege of delivering the keynote at the American
Culinary Federation's Northeast Regional Conference in Newport RI.
As many of our readers already know ACF members are the backbone of
our industry. They are always the first group to step forward when
someone needs their skills for a charitable event. I intend to
remind them that for every TV chef there are 1,000 other chefs that
work tirelessly in the sub-basement of hospitals and office
buildings and for every chef that gets to work in a glass enclosed
kitchen there are 1,000 that put out incredible food in less than
perfect conditions and for every celebrity chef there are 10,000
that go to work each and every day proud of what they do and
passionate about how they do it. Real chef's are not in it for the
glory---they're in it for the passion, for the honor of serving others
and for the love of good food prepared well!! Thanks ACF--here's one

On the Front Lines of Service
Think of your servers as coaches for
your guests. An effective athletic coach gives their athletes
the tools they need to be successful. They teach, motivate, reward
and celebrate. Think about positioning your service staff as
coaches for their guests. Their mission is to ensure that the
guest has a great experience. To that end they deliver
information, make suggestions, celebrate selections and support
the guest as they go through their meal. Remember great coaches
are super supportive, always available, ego-less and upbeat. Just
what we want in our service staff!

Building Leadership Skills
Leaders are different than managers!
Managers work from a framework of operations manuals, "things
to do" lists and deadlines. Critically important
stuff-yes---but leaders do all that and then they think about the
bigger picture, about how they can involve others and then they
explore effective ways to link ideas and people together for
everyone's success.
The place to start----your next
manager's meeting. Ask your team the difference between being an
effective manager and an effective leader. Remember, there are
leaders working at every level within your organization right now.
They are just waiting for your support and

Profitability Plus
This
month profitability plus is about a tool we use called the Menu
Gauntlet. It's a ten step checklist that we advise clients to
put every new item through that they intend to add to their
printed menus. The thought here is that if the item survives the
ten steps along the menu gauntlet it will be strong enough to be
placed on the menu and be a genuine contributor to the
profitability of the operation. This month the first two steps of
the gauntlet:
- Step One-Does the item
meet the needs, wants and desire of your current guests? Where
to check-sales mix, comments, complaints, current local trends
and the competition.
- Step Two-What is the real
vs. theoretical food cost percentage? Don't gamble on theory
or what the cost is on paper---do the reality check well
before the item makes it to the printed menu.
