Thoughts of the Month

My friend Bill Bender (Famous West Coast Restaurant-Foodservice Consultant http://www.whbender.com)  and I get together every year at the NRA Show for our annual meeting (bull session) which includes great conversation, much bragging and great food. He and I grew up together in the Washington D.C. area and as kids coming up worked at competing restaurants that were down the street from each other. He told me a story that really got me thinking about how we can reach back to thank those that had a positive effect on us as we were coming up. Bill recently delivered a speech to culinary educators out in California and he started thinking about his high school teacher that had helped him get started in the business. He tracked her down through his old high school (she had recently retired) He got a hold of her email address and sent off a note to her about how proud she would be about his speech and all the cool stuff he was able to do in the restaurant business because of her help. Several weeks went by and he didn't hear from her and all of a sudden a email came in with her phone number. He called her and they talked as if he were still sitting in her classroom. He made sure she understood the impact she had had on him and thanked her for her gift of mentoring. Take a second and think about tracking down the person that started you on your path and this most excellent adventure.

Thank You to Those That Stopped By During Our Welcome and Orientation for the High School Students at the NRA Show Last Month in Chicago-Over 1100 high school culinary and hospitality students visited the Show and walked the floor exploring opportunities in our industry. On the Front Lines of Service
Five Things Servers Should Always Do For Their Guests. No matter what the concept or menu, no matter if the operation is a white tablecloth or menu board service the employees on the front lines of service should be trained to:
  • Create Immediate Comfort-do they have what they need to get started-what can you deliver quickly to get things off to a great start?
  • Make Eye Contact-with each member of the party. Connect on a personal level with each guest.
  • Assess Level of Knowledge-ask questions to learn about what they know and what they may want. 
  • Be Fully Engaged-in the guest's experience. While tableside be fully focused on them and only them 
  • Deliver (at least) One Service Surprise-anticipate-anticipate-anticipate! Examples-refills, condiments, suggested pairings. (This is a Super G-Builder for the server--gratuity builder) 

Training Note: These five could become subjects for your next five line-ups or five weeks of service themes for your waitstaff and front of the house managers.   

 
Building Leadership Skills
Unit Manager as Succession Planner-One of the most difficult things we face as an industry is effective succession planning to ensure a flow of genuine talent through our units. Smart companies are beginning to build succession plans into the way they train and develop their unit level managers. Three points to consider: 
  • Make developing assistant managers as important as getting the P+L figures in on time each week!  
  • Base promotion to AD and above on how ready the assistants are to take over at the unit level-quantify exactly what your organization wants a future GM to be proficient in before moving anyone up. 
  • Succession planning begins in the hiring of hourlys. Identify potential and provide a real path (specific and written) for growth through the ranks. Home grown leaders are the mark of excellence and people want to work for companies that grow their future leaders from within!

Profitability Plus
This month we continue to explore a tool we use called the Menu Gauntlet. It's a ten step checklist that we advise clients to put every new item through that they intend to add to their menus. The checklist applies to all menus from menu boards to full service to catering menus. The thought here is that if the item survives the ten steps along the menu gauntlet it will be strong enough to be placed on the menu and be a genuine contributor to the profitability of the operation.   • Step Seven-Flexibility-How easily can we react to special preparation requests for this item? How adaptable is the items to other uses and combinations with sides? How will it be handled as a leftover? Build in flexibility as part of the creative process and you will create an item that delivers full profitability.   
  • Step Eight-Nutritional Concerns-Does the item answer some of the questions you may have been getting from your guests about their nutritional concerns? Do we have the nutritional info breakdowns handy if we get a request?

Thanks to all those that came to the Leadership Cares get together on June 14th in Washington D.C. Special thanks to Basil Hanlon and Kelly Morris of Smith and Wollensky Restaurant for hosting the event. What a great space for special events!
