Next
Generation of Culinary Stars-Again this May, I will be speaking to several
large groups of high school culinary students that will be visiting Chicago and
attending the NRA Show. I would really like to have some successful
people in attendance during this orientation session to show the young people
a model of what they can accomplish in our industry. If you're going
to be at the NRA Show please consider taking ten minutes out of your
schedule to stop by. All you have to do is stand there and let me tell
the young people a little bit about your story of coming up in the
business. If we can help these young people see themselves through your success they

Building Leadership Skills
Leaders as
Coaches-(Second of Five Installments)-Last month we
talked about the four things effective coaches do very well: To

Leaders can be
very effective in developing their next generation of company
executives by applying the following three coaching
techniques:
- Assess individual needs and
customize the ladder that each person must climb to attain
promotion to the executive level. Some emerging leaders are
great communicators but can't read a spread sheet. Coaching
leaders is an exercise in addressing and meeting individual
needs.
- Place those you are coaching
in "real life" company scenarios but with a
"real life" safety net. Allow your emerging
leaders to safely practice solving real company problems in
an environment where they can mess-up and feel OK about it.
Each meeting that you as an executive or current leader conduct
should have discussion or assignment component of solving a
"real life" company problem.
- Promote and Reward
Anti-Operations Manual Thinking. Creative thinking and
trying crazy things are characteristics of a potential
leader. It's not about abusing the operations manual, it's
about not following it to the letter and thinking the manual
has all the answers. Encourage those you coach to think
outside the box--the more outside the box they think the
more they will be thinking like a leader.

Profitability Plus
This

about Expanding Your Services to help expand your bottom line.
Smart operators look at where they can market the things they
already do very well. Think about the things you are already known
for and see if they fit into any of these "new"
opportunities below:
- Utilizing down-time or in-between
time. Use the time between lunch and dinner for other
events/services.
- Off premise catering. Where
would your signature foods be a big hit?
- Carry-out. What items travel
well and could be a add-on sale for your current in-house
guests?
- Special event service-what types
of community events would love to feature your menu and
services?

discounts.

Developing Your Personal
Brand
Career
Building Plan-How are you
doing on your career building goals? Review the Seven Things
you can do to enhance your career that we laid out in January.

accomplish the 7 things is the real test of success. Last month we
asked you to work on the following:

Creating a list of the three professional books you would like to read
and three personal enjoyment books you've been wanting to
read.
*
Conducting a personal time wasting audit-Identify actual times
when you are doing nothing-i.e.--zombi-ing
in front of the TV, sitting in traffic, staring at your computer screen etc.
(Often---I am great at all three of these!)
Your next goal is to identify one
hour each day that you will dedicate to career building. This will
be the time you use each and every day to focus on your
career. If you stick to this one hour--you're half way home on our personal brand adventure.
It may be a 1/2 hour in the morning and a 1/2 hour in the
evening--but work to carve out an hour. Here's a few things you
can do with your hour:
- Read 25 pages in the
professional book you selected and 25 pages in your
"personal enjoyment" book.
- Listen to a couple of chapters
from one of the books on tape.
- Review your "five years
from now" resume that you've been writing.
- Make two phone calls as part of
your real life networking plan.
