On the Front Lines of Service
Knowledgeable Service Requires Knowledgeable Servers-Our favorite thing to hear from a server is "If you like ______________, you'll love our _______________. When a server delivers this line with confidence you know that they really know their stuff. They not only know have mastered the menu but can link what their guests really like with particular items on that menu. When this happens--it's magic for the guest. Their level of confidence in their upcoming meal experience skyrockets!    

Teaching Point: Each day at your pre-shift meeting focus on how your waitstaff can use their knowledge of the menu to help their guests make good choices. Instead of just talking about ingredients--add to the servers level of knowledge by talking about how the menu items link to guest comments or requests. For example: If a guest says--I'm not a "fishy fish" person-teach the servers which items may fit this type of comment.   

  

Building Leadership Skills

This month we focus on the importance of the personal success of the individual you are coaching. As a coach your focus must be on helping the individual be successful. Personal success must be your first goal. Company success will soon follow. If you help your managers become personally successful your company will reap the benefits of a happy, motivated and productive leader. Identify how each describes their own personal success. It may be saving up for a mortgage, or their wedding, or going back to school or helping their children . If you give them the tools or opportunities to reach some of these goals they will soon see the connection between being productive at work with the ability to reach their personal goals. The fun part of this approach is when some of these managers begin to help their employees in the same way!!    

 

Profitability Plus
This month's Point of Profit  focuses on the importance of standardizing your receiving practices for all the  merchandise that comes in through the back door.  If we have service standards for how we interact with our guests, we should have standards for how we deal with things going on at the back door Your goal should be to come up with a process that everyone that receives merchandise will follow to ensure you always get the best quality, the correct quantity and pay the price you agreed on when you made the purchase. If you don't have receiving standards here is where to start:
  • Walk through the step by step process and create a checklist that includes all the steps.
  • Include checking for correct quality, quantity, price and temperature.   
  • Ensure that the back door is kept secure and opened only to receive one delivery at a time.
  • Build in to the checklist that all deliveries once checked should be put away and secured immediately.

  • Conduct your personal skills inventory. Be honest with yourself and list areas where you need to focus.
  • Once you identify the skills you need to go after-build your plan of attack. What mini-courses, industry conferences,  or food shows will you attend to gain the identified knowledge.
  • Who can help you learn these identified skills? Identify people inside and outside the company that may be able to teach or coach you in learning. In other words--who should you be hanging out with?
