Hospitality Taking the Lead-This week I got an email from a long time New York City subscriber that said he was reading some of our back issues about 9/11. His note reminded me about the things that many in our industry did to simply reach out to others...........their stories continue to reveal to me that maybe it's the restaurant and hospitality industry that could actually take the lead and make positive things happen in the world. Just think if we put the same energy in bringing people together that we do in lobbying against a rise in the minimum wage. Just think if we used our expertise and passion to really end childhood hunger and--yes what if we as an industry actually brought worldwide hospitality and foodservice leaders together to work on world issues......My bet is positive things would happen. 

Some of our readers will say--who is this naive guy? I'm just a simple operations guy that has seen the power and value of people that live and work in our industry. They have much to give. They know that the concept of hospitality is universal. They know the power of bringing people to the table! 

Just think about what we could accomplish by sharing the gift of hospitality with others. Maybe it's time for us to take the lead!

On the Front Lines of Service

Helping Your Service Staff Build the Check-This month let's talk about helping your service staff sell your products and services. 

Three Steps to Get Going:    

  • Knowledge-Determine the specific information about the product that you want staff to really know! Start with the ingredients and preparation methods--at a minimum.
  • Comfort-Have servers practice describing and explaining the items to each other. The more comfortable they are with the information the easier it will be for them to promote it!   
  • Picture-Help your servers create mental pictures-Work with your servers to help them describe the exact plate presentation (from appetizer through dessert) The more they can paint a mental picture for their guest-the better chance they have of selling the item. 

Getting Started-Take the center of plate items on your menu and put them through the three steps above! 

Building Leadership Skills

Creating the Next Generation of Leaders-Good succession planning is all about preparing young managers for future leadership roles in your organization. Over the next twelve months we'll explore the 12 leadership skills needed for genuine success in today's business world.   

Leadership Skill Number One: Vision 

Vision, in this context, is not about how good your eyesight is but how good you are at creating a picture of how things could or should be! In this case vision is about how you think, imagine and even dream about what could be! There are four major components for becoming a visionary leader:

  • Dream the impossible-Be an outside the box (or even outside the universe) thinker. 
  • Develop a mental a picture of what you want for yourself, your business, your guests and employees.  
  • Live the picture you've created--See yourself in that picture each and every day. Keep the end in mind. 
  • Communicate the picture to those that work with you to make it happen. Teach what you have painted. 

 

Points of Profit 

Creating Weekly Goals: The Point of Profit That Creates Focus! This point of profit involves determining several goals to be accomplished each week by yourself and individual members of your team. At the beginning of the week the goals are assigned and at the end of the week they are reviewed. It often turns into a little friendly competition between fellow managers and staff to see who actually accomplished  their goal. 

The concept of a weekly goal or goals also pays bigger dividends for the leader---its  helps bring focus to what's important and what you are trying to accomplish. It keeps priorities front and center for the entire team!  

Steps to make it happen:

  • Determine what you want to accomplish-link it to your overall business strategy or plan.
  • Make the goals specific and measurable.
  • Share the progress on a very regular basis (specific meeting or a specific day and time each week)
  • Determine how you will celebrate when a goal is reached.   

Special Note: This is also a great approach for setting team goals and team building!
