Thought of the Month

Dropping the Basket of Fries-I missed the "Kevin Federline" commercial during this year's Super Bowl. Those of you that have spent a lifetime in this business know that's its never been about dropping baskets of fries. Its about starting out on a path toward real success and the joy of serving others honorably. Why can't we get this through to others? Is it that we are spending too much time as an industry trying to keep wages down and not focused on creating a path from fries to ownership? Are we being hypocrites when we get all bent out of shape when people bring up the old burger flipper image? There is a very bright future and plenty of room in this business for everyone to succeed. We need to be focused on the ladder from fries to the board room.  We have to be proud and start shouting loudly about those that dropped fries and flipped burgers as they climbed their ladder! If we decide to make these people our heroes and the heroes for the next generation-we can actually have the last laugh on this rather than be the butt of the joke! Tell your stories!!!!

On the Front Lines of Service

The Concept of One Station-Do you ever notice that restaurants that have attained service excellence are operations where there is one focus by all the players. Everyone on staff is genuinely focused on the guest's entire experience. In these places you never hear "this is not my station or I'll tell someone about that or I'll check with so and so...." Each person is empowered to take immediate action to solve a problem and make things perfect!

The One Station Concept:

  • Helps your staff see the big picture of service and feel a part of the house's overall success.
  • Actually makes things easier--everyone is crystal clear on their mission.
  • Brings the guest back....You hear things like-everyone made sure we were taken care of-they really care!
Building Leadership Skills

Creating the Next Generation of Leaders-Good succession planning is all about preparing young managers for future leadership roles in your organization. We are almost half way through our exploration of the 12 leadership skills needed for genuine success in today's business world.

This Month-Leadership Skill Number Six: Sharing Power: Sharing power is the number one ingredient for an effective succession plan-a succession plan that actually works, not on paper but in real life. When the leader shares power she is actually helping to grow the business! Long after she is promoted her legacy of leadership lives on---because she has allowed others to share in the managing and leading of the business.

Managers should be taught from the beginning that part of being an effective leader and part of being considered for promotion will be how well they can share the power of their leadership with those around them. Their success will be built on how successful those they teach will be.

Leaders that Share Power:

  • Identify the strengths of those they lead and then look for ways to delegate to that person's strengths.
  • See the success of those they lead as a measure of their own success.
  • Understand that real power comes from giving it away!

Points of Profit

This month's Point of Profit is Portion Check-Up: How often do you conduct a portion audit of all your menued items? How often do you check if company recipes or your recipes are being followed? This month commit to do the following two things:

  • Publish/re-publish the list of approved portions and explain each to your back of the house staff.
  • Commit to physically check several items each day-with portion scales, proper scoops, ladles etc.

Take Home Idea of the Month
Personal Success-Preparing for the Journey

Ultimately your personal success is predicated on the amount of personal effort you put forth to reach your goals. Reaching your destination is about knowing where you want to go and then putting your full effort behind the adventure of getting there. This month think about the following:

  • Where do you really want to be or see yourself in 36 months? What does this picture look like?
  • What do you need to pack for your journey? Example: education, contacts, mentor, self discipline
  • How much time are you willing to put in to get there? Success is a sacrifice---but well worth it!

Manager's/Leader's  Note: As part of mentoring your managers have each one write up a very short personal description of the three bullets points above and then use this as your guide for helping them succeed!!!
