Thought of the Month

Thought of the Month-Are Your Employees Having Fun Working With Each Other? Every year at the NRA Show I try to take in as many of the educational sessions as possible to learn from the best and the brightest our industry has to offer. One of the speakers this year was Danny Meyer of Union Square Cafe fame and recent author of Setting the Table. He told his audience that if his employees were enjoying themselves working with each other that everything would be great for their guests. He talked about watching his people interact with each other to see if they were genuinely having a good time. The take home tip here.... take a look at how your people get along with each other, see if they're having fun on the job and ask yourself if you've created an environment that encourages having fun while serving others! Thanks Danny!

Super Thanks-To those that volunteered to sit on the 2007 NRA High School Visitation panels in Chicago last week! Your advice and career tips had a real impact on the hundreds of young High School culinarians that attended the Show. Special thanks to Macy's Executive Chefs Brad Saylor and Sharon Cohen, Sodexho's Executive Chef Desmond Fannin, and The Palm's Nikki Chirchirillo and Brittany Swineford. Also special thanks to Ms. Nancy Cho of Argo Tea, Mr. Tim Carey Assistant Vice President Ecolab, Ms. Christin Myers from Creative Restaurant Solutions Inc. and Ms. Kareema Jones from Kellogg. Hundreds of the best and brightest high school culinary students were inspired and energized by your stories! You all made this year's event very special! Sincere Thanks!

On the Front Lines of Service

This Month's On the Front Lines of Service: Working From the Same Page-This month we explore how you can help build teamwork and then help your team focus on their mission of delivering excellence! Getting everyone on the same page is not that difficult if you actually have a page to get on. The work is in creating the page--here are several elements to help you write the first draft of the "Same Page"! Include your:

  • Service vision-what does the picture of service excellence look like for each employee?
  • Understanding and commitment to standards-list your specific service expectations.
  • Shared understanding that everyone is accountability for delivering on the picture.
  • Clear understanding that everyone is treated the same--fairness is the key here!
  • Understanding that everyone shares in the reward. Everyone has a seat at the celebration table!
Building Leadership Skills

Creating the Next Generation of Leaders-Good succession planning is all about preparing young managers for future leadership roles in your organization. We are almost half way through our exploration of the 12 leadership skills needed for genuine success in today's business world.

This Month-Leadership Skill Number Nine: Leading is "Hands On" The very best leaders are those that lead by doing. Talking about leadership is fine---but "doing leadership" is 100 times more effective as a teaching tool. Genuine leaders go "hands on" when they are leading others. They take action---they do stuff!!!

"Hands On" Leaders:

  • Are fully engaged, not with their computer screen but with fellow leaders, employees and guests.
  • Are tool givers. From trays to flatware to training--they act as tool givers for the success of others.
  • They roll up their sleeves, jump in and lead from a position of "elbow to elbow" with their workers!

When someone says that you are a "hands on leader" take it as a huge compliment. It means that you are present, fully engaged and directly involved in the mission at hand!

Points of Profit

This Month's Point of Profit-What Gets Measured Gets Done! This month identify what is being measured on a consistent basis in your operation. Ask yourself or your key players the following:

  • Are we covering the basics-daily cover counts, sales per shift, check averages?
  • Are we using POS info to it's fullest?
  • Are we fully using the data we gather to help us make smarter decisions on staffing and purchasing?.
  • What other stuff should we measure-menu sales mix, daily center of the plate reconciliation, table turns?

"What Gets Measured Gets Done"-This old phrase, that many of us grew up on, really does remind us about the importance of what we focus on---what we measure, track or monitor--will actually help us accomplish important stuff!

Take Home Idea of the Month
Personal Success-Putting Yourself First-Follow the 4 Es

Back this Month by Popular Demand! Restaurant people are famous for not taking care of themselves because they so often are focused on taking care of others--(their guests and employees!) Personal success takes some investment in yourself. Think about the following and when you're creating your daily things to do list put these on the top of the list rather than at the bottom: Follow the 4 Es below to get started:

  • Educate yourself first so you can then teach others-Commit to learn one new thing each day!
  • Escape-Set aside--your own time- maybe it's only an hour a day--but own that hour and do what makes you happy for that full 60 minutes.
  • Explore--pretend your a little kid and explore something each day that genuinely interests you.
  • Exclude the negative-eliminate those that bring you down. Surround yourself with only positive people.
