Thought of the Month
Thought of the
Month: Back
to School is Really Back to Hope! The last couple
of weeks have been filled with stories in the news about the first
day of school and I couldn't help see the look of excitement in the
eyes of the kids as they walked through the school doors for the
very first time! There was also a look of excitement in the eyes of
their parents (a look of relief for parents of teenagers).
What I really saw in those TV images
was a look of hope, a look of what could be possible, an excitement
about what would happen next. Maybe there's a lesson for us to learn
about when our new employees walk through our door for the very
first time. They're also filled with anticipation and hope for a
better future. Maybe our real job is like a good teacher..... to
teach them, give them tools and to keep hope alive for each of
them!
By the
way.........................Check the ideas below in the Personal
Success column about how going back to school relates to
your success!

On the Front Lines of Service
This Month's On
the Front Lines of Service: Your Role in Creating Service Excellence
When we walk into a restaurant we immediately learn about the
type of leadership in the unit by the way the staff is operating.
The manager/leader plays three major roles in creating service
excellence. She:
- First and foremost delivers
service excellence to those that work for her! She provides the
tools of service!
- Is the head sales person and cheer
leader for guest service! She puts service out front each and
every day!
- Models for her staff the actual
service standards she expects them to deliver to their
guests!
Get Started on
Creating Service Excellence: Take
a look at your leadership levels on the floor. Are the leaders role models of what you want servers to do? Are they working in a
supportive role to staff?

Points of Profit
This Month's
Point of Profit-Plate Profit
vs. Food Cost This month take a look at what each of your
menu items contributes to the bottom line rather than just their
food cost percentage. Often times we are frightened away by a high
food cost percentage. I don't know how many times we've
heard...."we don't put anything on the menu unless it's below a
40% food cost". This really limits your profit potential.
Remember an item may have a high food cost--but that same item will
most likely be higher priced (meaning higher revenue). Keep in mind
that it should be about what the sale brings to the bottom line-not
just what the food cost is. Look
at it this way, think about what a $35.00 entree sale delivers to
the bottom line vs. what a $21.95 entree delivers.
Get
Started on Plate Profit: Send each one of your menu items
through a quick food cost review. Take a look at your existing check
average and test the waters by introducing several higher priced
entrees.

Personal Success-Back to School Time.......It's For All of
Us! Back to School Time-This is
a great time of year to remind us that going back to school is not
just for the kids! There are plenty of opportunities for the
busy professional adult to schedule some learning and career
building time! Just take a look at the offerings at the local
community college, upcoming conferences and food shows that are on
the horizon. All of these offer an opportunity to network, learn
and grow.
Going back to school doesn't mean
signing up for 18 credits--It may mean acquiring a new skill, getting
up to date in your field or exploring something that will help
you grow in your career. It can be something as simple as
reading an article, taking a one day seminar or workshop, or even spending
the morning in the local public library.
Here are three things to help you---get into the back to school
spirit:
- Check the calendar for upcoming
local area food shows. Sign up, walk the aisles and meet new
people!
- Even if it's for the Spring
semester---sign up for a short course at the local
college-think about learning a new technology, improving your
communication skills or enhancing your supervisory
skills!
- Spend one morning a week
exploring the local library and by the way-leave your cell in
the car!
